Lifted aromatics of Dark wild berries, Crushed violets, Graphite and flint. Subtle hints of cool earth and coastal herbs.

Taste

Silky on entry with a core of blackberry, cassis, and wild berry compote. Graphite tension threads through the mid-palate, carried by the valley’s volcanic minerality.

Pairing

Herb-roasted lamb with sea salt, Charred ribeye with rosemary oil, Braised short ribs, Aged Manchego or firm goat cheese.
